Ingredients
1 carrot , chopped 1 onion, chopped 4 stalks celery, chopped 28 ounces diced tomatoes 1 potato, diced 15 ounces kidney beans 2 Tablespoons olive oil 2 Tablespoons butter 1 1/4 teaspoons paprika 2 quarts chicken stock 3 Tablespoons tomato paste 2 chorizo sausage, chopped teaspoon cayenne pepper salt pepper Directions
Chop the chorizo and saut茅 in a fry pan until browned, drain and set aside.
Add the olive oil and butter to a large soup pot.
Add the onion, carrot, and celery. Cook for 2-3 minutes.
Add the tomatoes, potatoes, stock, paprika, cayenne pepper, salt and pepper. Return to a boil; add in the beans and tomato paste.
Then lower to a simmer and cook for 45 minutes.
Add in the cooked chorizo and cook to warm. Serve.
